Half or Whole Freezer Pig

Now taking reservations for whole or half freezer pigs, for spring/summer 2023 fulfillment.


What do you get from a whole pig? Your pig is custom processed for your order, so you have choices!

  • Loin: cut as bone-in chops, boneless chops & whole tenderloin, or roasts
  • Shoulder: butt and/or picnic roasts, or steaks
  • Ribs!
  • Ham: roasts and/or steaks, smoked or fresh
  • Belly: fresh pork belly or smoked bacon, whole or sliced
  • Grind: fresh ground pork, mild, hot, or breakfast sausage. (Any section above can be ground to give you more sausage!)
  • You can also get jowl, hocks, heart, tongue, liver and lard if you'd like.


Average live weight is 250 lb, which gives you approximately 125 lb of finished meat for a whole pig, or 65 lb for a 1/2 pig. After you order, you will need to fill out our cut sheet with your processing choices. Your order will arrive frozen in labelled, vacuum sealed packages, ready for your freezer.


Our pigs are mixed-breed crosses, raised outdoors on pasture, natural grains, milk & whey from cheesemaking.


Pricing is $425/half or $750/whole, which includes processing costs. $100 non-refundable deposit required, with balance due at pickup. For pickup at the farm, the Ithaca Farmers Market, or other mutually agreeable location. Our steers are born & raised outdoors on pasture, weather permitting and are exclusively grass fed & finished. 

Whole beef $4.50/lb HCW

Half beef $4.75/lb HCW

(A split quarter means you get 1/2 of the front quarter & half of the hind - so you get a selection of all of the cuts)


Our steers average around 600 lb HCW, so the cost of a quarter is around $6-700.

A 20 lb mix of either beef, pork, or both, fresh from our farm - wait til you taste the difference!  Each box is a small share of a whole animal, including 50% ground meat (ground beef, ground pork, sausage), 1-2 roasts, and a mix of other cuts: steaks, chops, ribs, stew, etc. (No organs included unless specifically requested). Special requests honored on a first come, first served basis.

All meat is frozen and vacuum sealed; can be shipped, picked up at the farm, the Press Bay Alley Food Transfer Hub, the Ithaca Farmers' Market, or locally delivered. Butternut Baby Swiss

​While you may have had Swiss Cheese before, this Baby ain't your average emmenthaler! The cows may be Brown Swiss and the recipe may be classic, but it’s our Finger Lakes terroir that gives this Baby such a unique, delicious flavor. Our tender Baby Swiss has a beautiful latticework of tiny holes and a delicate balance of sharpness and sweetness. Piquant and buttery, this cheese is kid-approved and the perfect companion to grapes or pretzels, on a sandwich with ham and mustard, or as an hors d'oeuvres with cured salami, your favorite fruit chutney and a nice cold lager, still cider, Merlot or Riesling.  2014 Gold Medal Farmstead & Artisan Cheese, NY State Fair. Ingredients: our own pasteurized cows' milk, cultures, vegetable rennet, salt.  Choose from 1/2 lb vacuum package,  3-4 lb 1/2 wheels, or 8-9 lb whole wheels.

Goblin

$9.00 - $125.00

Goblin made its debut at the Ithaca Farmers Market on Halloween weekend of 2015. We quickly sold out of our entire first batch and have been increasing production ever since to meet the demand for this cheese. Goblin is a semi firm, Alpine style cheese with a smooth straw colored paste.  Aged for over three months, this cheese has a mild spicy side, with a subtle aroma from the brine aging. Its real charm though, is its fruity tanginess, imparted by the special combination of our own Swiss cows milk and the cultures we add, making it a perfect complement for snacks, sandwiches, grilling, as a melting cheese or in fondue. This cheese is particularly well-suited to wine pairing. Goblin's herbal, nutty flavor balances well with Riesling's high acids and fruity tang. Also try pairing with Dolcetto, Red & White Rhones.

Ingredients: our own pasteurized cows' milk, cultures, vegetable rennet, salt.
