What do you get from a whole pig? Your pig is custom processed for your order, so you have choices!
Average live weight is 250 lb, which gives you approximately 125 lb of finished meat for a whole pig, or 65 lb for a 1/2 pig. After you order, you will need to fill out our cut sheet with your processing choices. Your order will arrive frozen in labelled, vacuum sealed packages, ready for your freezer.
Our pigs are mixed-breed crosses, raised outdoors on pasture, natural grains, milk & whey from cheesemaking.

(A split quarter means you get 1/2 of the front quarter & half of the hind - so you get a selection of all of the cuts)
Our steers average around 600 lb HCW, so the cost of a quarter is around $6-700.

A 20 lb mix of either beef, pork, or both, fresh from our farm - wait til you taste the difference! Each box is a small share of a whole animal, including 50% ground meat (ground beef, ground pork, sausage), 1-2 roasts, and a mix of other cuts: steaks, chops, ribs, stew, etc. (No organs included unless specifically requested). Special requests honored on a first come, first served basis.

Our USDA inspected beef, pork & veal is available by the individual cut. All meat is frozen and vacuum sealed; can be shipped, picked up at the farm, the Press Bay Alley Food Transfer Hub, the Ithaca Farmers' Market, or locally delivered. Goblin made its debut at the Ithaca Farmers Market on Halloween weekend of 2015. We quickly sold out of our entire first batch and have been increasing production ever since to meet the demand for this cheese. Goblin is a semi firm, Alpine style cheese with a smooth straw colored paste. Aged for over three months, this cheese has a mild spicy side, with a subtle aroma from the brine aging. Its real charm though, is its fruity tanginess, imparted by the special combination of our own Swiss cows milk and the cultures we add, making it a perfect complement for snacks, sandwiches, grilling, as a melting cheese or in fondue. This cheese is particularly well-suited to wine pairing. Goblin's herbal, nutty flavor balances well with Riesling's high acids and fruity tang. Also try pairing with Dolcetto, Red & White Rhones.
